Punjabi Dry Potato Sabji

Ingredients:

  • 5kgs boiled potatoes (diced)
  • 4 tablespoon mustard seeds
  • 2 tablespoon cumin seeds
  • 10 green chilies (slit)  
  • 4 tablespoons turmeric powder 
  • 2 tablespoons dried mango powder
  • 4 tablespoons salt 
  • 4 tablespoons FSIPL Sunbay Hariyali Tikka Base (optional)
  • 2 tablespoons garam masala
  • 4 tablespoons kashmiri chili powder
  • 2 tablespoons coriander powder
  • 2 tablespoons garam masala
  • 1 cup refined oil 

Instructions: 

  1. Add 1 cup oil in a deep frying pan.
  2. Heat the oil and add 4 tablespoons mustard seeds and let it crackle.
  3. Add 2 tablespoons cumin seeds, green chilli and sauté it on low heat.
  4. Add diced boiled potatoes, 4 tablespoons turmeric powder, 2 tablespoons dried mango powder, 4 tablespoons salt, 4 tablespoons Hariyali Tikka Base (if using), 2 tablespoons garam masala, 4 tablespoons kashmiri chilli powder and 2 tablespoons coriander powder.
  5. Mix well gently, so that spices are combined with potatoes.
  6. Cook it on low heat for 5-7 minutes and it’s ready to serve.
  7. Serve it hot with roti or paratha.
