Ingredients:
- 1½ kg rice (7½ cups)
- 1 kg paneer
- 4 medium onions, finely chopped
- 2 bunch mint leaves, leaves removed
- 5 teaspoons ginger paste
- 3-4 pieces garlic
- 20 peppercorns
- 2 tablespoons coriander seeds
- 3 teaspoons cumin seeds
- 2 tablespoons lemon juice
- 13 pieces green cardamom
- 5 green chilies, slit
- 10 bay leaves
- 1 cup peas (about 250g)
- 15 cups water
- 1½ tablespoon salt
- 1 cup coriander leaves
- ⅓ cup ghee
Instructions:
- Soak the rice for half an hour. Cut the paneer into small cubes.
- In a blender, add chopped onions, mint leaves, ginger paste, garlic, peppercorns, coriander seeds, cumin seeds, and lemon juice, and blend it to form a fine paste.
- In a deep large pan with a cover, on medium heat add ghee. Once the ghee melts, add cardamom, green chilies, bay leaves and sauté them until they emit aroma.
- Add the prepared paste with 1 cup water into the pan. Stir it and allow it to cook for a minute.
- Add the chopped paneer, peas and sauté it for a minute.
- Add rice and water. Bring to boil on high heat. Once rice boils, lower heat and simmer for 20-25 minutes until rice is cooked. Serve it hot.
