Punjabi Carrots Potato Peas Curry

Ingredients:

  • 2kgs potatoes
  • 1.8kg carrots red
  • 1kg peas shelled
  • 6-8 green chillies, sliced but whole
  • 6 teaspoons ginger, finely chopped
  • 6 teaspoons cumin seeds
  • 1 teaspoon asafoetida
  • 1kg tomatoes
  • 3 teaspoons turmeric powder
  • 6 teaspoons red chilli powder
  • 6 teaspoons garam masala powder
  • 1 cup coriander leaves, finely chopped 
  • salt to taste
  • 10 tablespoons oil

Instructions:

  1. Heat oil in a pan, add chopped green chilies and chopped ginger.
  2. Add cumin seeds and cook for a minute until they pop and are lightly browned.
  3. Add asafoetida and also add chopped tomatoes.
  4. Cook tomatoes for 6-7 minutes and add turmeric powder, red chilli powder, salt to taste and mix well.
  5. Add peeled and cubed potatoes, sliced carrots and shelled peas and add 2-3 tbsp water if required.
  6. Cover the pan with a lid and cook for 15-20 minutes till potatoes are well cooked.
  7. Keep stirring it in between so that it does not stick to the bottom of the pan.
  8. When potatoes are done sprinkle garam masala and mix well.
  9. Garnish with chopped coriander leaves and serve hot with chapati paratha or poori.
